Retired newborn clothes
We love that Cole is growing and changing every day, but it's a little sad that our little dude isn't so little anymore!
We packed away most of his newborn clothes as he now fits very nicely into 3-month duds!

Easy Southwestern Chicken Crockpot Dinner
Ingredients:
4 medium-sized frozen boneless, skinless chicken breasts
1-8 oz. package cream cheese
1-16 oz. jar of salsa
10 oz. package of frozen corn*
1 can of black beans, drained and rinsed
Directions:
Put all ingredients in crockpot. Cook on low 6-8 hours, stirring every 2-3 hours. When finished cooking, shred chicken and return to crockpot. Turn the crockpot off for 30-45 minutes to make less soupy. Serve in tortillas or over rice. Serves 6-8.

*Can substitute 1 can of corn, drained

Butternut Squash Risotto
Ingredients
- 2 cups cubed butternut squash
- 2 tablespoons butter
- 1/2 onion, minced
- 1 cup Arborio rice
- 1/3 cup dry white wine
- 5 cups hot chicken stock
- 1/4 cup grated Parmesan cheese
- salt and ground black pepper to taste
Directions
- Place squash cubes into a steamer basket in a saucepan. Add water, cover, and bring to a boil over medium-high heat. Allow to steam until the squash is tender (10 to 15 minutes), then drain, and mash in a bowl with a fork.*
- Melt butter in a saucepan over medium-high heat. Add onion; cook and stir for 2 minutes until the onion begins to soften, then stir in the rice. Continue cooking and stirring until the rice is glossy from the butter, and the onion begins to brown on the edges, about 5 minutes more.
- Pour in the white wine; cook, stirring constantly, until it has evaporated. Stir in the mashed squash and 1/3 of the hot chicken stock; reduce heat to medium. Cook and stir until the chicken stock has been absorbed by the rice, 5 to 7 minutes. Add half of the remaining chicken stock, and continue stirring until it has been absorbed. Finally, pour in the remaining stock, and continue stirring until the risotto is creamy. Finish by stirring in the Parmesan cheese, and seasoning to taste with salt and pepper.
*Alternative to first step: cut the squash in half and remove the seeds with a spoon. Then, place (peel down) on a baking sheet and bake at 400 for 40-45 min, or until the squash is tender. Then, just scoop out the squash and mash with a fork (I think this is much easier!)

Day at the park
We took Stella to the newly-opened Lowry Dog Park and Cole was content to sleep in his stroller.
So nice to have mild days in January!

Eventually he'll grow into this bib but for now it's hilariously large on him!

P.S. This was mommy's Nebraska t-shirt when she was a baby! Does that make it an antique?
